BANANA PANCAKE RECIPE

This is my everyday go-to-breakfast-meal. Yes, even on weekends, I make this! Because it's all yummy and healthy and an energy booster meal! As a Filipino, I was used to eating a full meal of rice in my life. But since I moved here, I don't have the time to do the whole production of cooking rice and a viand. So I decided to find something that is fast, easy, and healthy.
Disclaimer: This is not a meal to loose weight. This is simply a good pancake recipe that I live by.
All you need is 15 minutes from your morning ritual. And these ingredients...
1 piece ripe banana
1/2 cup refined oats
a pinch of salt and cinnamon powder
strawberries or blueberries
coconut oil for frying
Optional: vanilla extract and cayenne powder (I like a little bit of spice)
How to cook?!
Smashed the banana and add all the other ingredients to create the batter.
Using the coconut oil, fry the batter by forming a pancake circle. (I know you understand this part, despite my awkward wording and instruction.) Just look at the pictures below.
With this mixture you will have three beautiful banana pancakes. And I believe it's enough to give you energy for the rest of your morning.
If you feel you need more, you can just double all the ingredients.
Then, add your berries and syrup. To go all the way healthy, use all organic products you can find on your local grocery store.
I always eat my banana pancakes with black tea. In my head, I'm balancing the sugar or sweetness from this meal. Haha. It's really good and yummy! I swear!
